[livejournal.com profile] hrothgar1 You can be proud of me!  I just jumped in and tried my exeriment.  You know that's not an easy leap for me.  But let me start at the beginning.

My low grain diet has left me in a bit of a fix, fiber wise, so I've been buying a Morning Glory muffin from the bakery each morning. They aren't too expensive but they do add up.  So I hunted up some recipes to see what I could find.  Unfortunately, none of them were exactly what I wanted.  I grabbed a few and my mom contributed one and I sat on it until tonight when I had a little time.  I knew I didn't have any whole wheat flour but I remembered buying some whole grain cereal for a bread recipe I wanted to try.  It's Hodgson's mill with flaxseed and soy.  And it also had a muffin recipe on the box that looked rather similar to the Morning Glory recipes.  I needed to work with what I had in the pantry- no running to the grocery store. I didn't have coconut but I had a few dates.  I knew they weren't the same but maybe they'd add texture.  All the recipes seem to call for nuts but I didn't have any pecans on hand so I opted to leave them out.  Here is what I ended up with (as best I can remember).

1 c multigrain cereal
1 c all purpose flower
1/2 c wheat germ
1/4 c sugar
1 T baking powder
1/2 t baking soda
2 t cinnamon
1.5 t  ginger
pinch of salt
2 eggs
1/2 c applesauce
1/3 c pineapple juice
1/4 c canola oil
2 t vanilla
1.5 c grated carrot
1 grated apple
1/2 c pineapple
1/2 cup raisins
2 handfuls dates
I mixed all the dry ingredients together.  Then added the wet ingredients. I ran the apple and the pineapple through the foot processor until I had a slury before adding them to the mixture.  It made 12 over full muffins but I read that they are dense and don't rise much so I left them that way.  They went into an oven at 400 degrees F.  I started with 15 minutes. The cereal recipe said 20-22 minutes.  Mom's recipe said 15-18 minutes. At 15 minutes they had raised nicely but I think they were still a little wet inside.   I added 7 minutes and they looked about right.  They are cooling now and smell really good.  I'll let you know how they turn out.

I'm starting my water aerobics class again at noon tomorrow and I figured a muffin before class would help tide me over until I could get my lunch.  I might have to test one tonight before bed too.
