We started with a bag of rose petals and some rose water:

Then we boiled the petals on the stove... oh what a heavenly smell!

When you add lemon juice, you get a brilliant, almost blood red.

Filter out the petals with a colander... you can do this either before or after you add the lemon juice.

Add the pectin. The recipe says to immediately add the sugar but we discovered if we let it boil until it starts to thicken then add the sugar, we get jelly instead of syrup.

We made four batches...one will likely be syrup. The color is amazing!



The fifth batch of jelly tonight was lavender.

It's a beautiful pink but so VERY different from the rose. It was quite frothy too. We might have gotten carried away with the boil and the whip.
