Food experiments....
Mar. 25th, 2015 12:37 pmThe potato leek soup is very tasty but too delicate to be satisfying. I need to figure out something that will partner well with it. There are not quite enough calories for it to be a good meal by itself.
I picked at the Asian pork out of the pot last night and it was very tasty. Today is actually the first time I will have it as a meal but I expect it will still be very good. Sometimes, when I use the crockpot, the food is really good when it first comes out but then it dries out and isn't as good. I put the juice in with the meat shreds so I hope that doesn't happen with this recipe.
This morning, I was trying to figure out how to get some vegetables into my lunch when I didn't have time to cook them. I had raw vegetables but I'm not a big fan of dry, raw vegetables and commercial ranch dressings have some form of dairy product in them. So I decided to whip up this recipe using cashew milk and light mayo. It tasted like mayo when I first made it but after 5 hours of sitting in the refrigerator it is a delicious ranch dressing. I ate my vegetables quite happily.
I want to try this vegan garlic alfredo sauce soon too. I'm amazed by how much the Silk Cashew milk tastes like milk to me. It will be interesting to see how the ground cashews work in a recipe.
