We had scheduled French Onion soup for dinner last night. We've scheduled it several times but I have never had it. So yesterday Carrie sent a YIM and asked if I wanted to come over for dinner since we were having french onion soup. She added "I made a triple batch so there will be some for your lunch on Friday...." *wheedle, wheedle, wheedle--grin* How could I resist? It sounded great and it totally lived up to my expectations. It's a lower fat soup, even though it isn't usually. We found the recipe online but neither Carrie nor I can find the source now and we didn't copy the nutritional information so it would be nice to find it. It's a crock pot recipe so easy for a work day. I would recommend more onions since the onion to broth ratio is kind of low. In case you are interested the ingredients are below. I've misplaced the instructions but my guess is that you saute the onions lightly in the oil and margarine, transfer to the crock pot and add everything but the bread and cheese and simmer all day. Before serving, toast the bread slices in the oven then add the cheese (we used Swiss) and melt. Then place bread on top of the bowls of soup and enjoy.

French onion soup:
* 2 tbsp vegetable oil
* 2 tbsp trans-free margarine
* 3 onions, thinly sliced
* 1 tbsp sugar
* 1 tsp salt
* 2 tbsp all-purpose flour
* 4 cups reduced-sodium vegetable broth
* 1/2 cup dry white wine (optional)

* 8 slices crusty French bread
* 1/2 cup grated reduced-fat Swiss or Parmesan cheese
