Pickled strawberries?
Jun. 18th, 2012 10:59 amWe have been eating and enjoying a concoction that Carrie makes called strawberry obscenity for years. It's fantastic with angel food cake. Yesterday I picked a gallon bucket worth of strawberries and needed to process them into something edible or freeze them so that they wouldn't go bad in the fridge. I opted to make the obscenity. Hulling and slicing a gallon of strawberries takes a really long time! I realized, as I was pouring the only other ingredients, sugar and balsamic vinegar, over the strawberries...I was making strawberry pickles. Erk! Okay, now I know why it's called an obscenity. However, the end results are fantastic. The vinegar taste doesn't really come through and it sweetens the berries significantly (although with fresh picked berries it's probably not necessary).
I'm looking forward to a few days of strawberry pickles. ;>)
