Unfortunately, I don't much like to exercise but I go to my water aerobics class three days a week at lunch (45-50 minutes/day) and I'm trying to hit the Wii fit plus 2 days a week or more. Right now it makes me sore. I'm hoping if I keep doing it it won't be quite so bad.

Today I did 48 minutes (258 calories):

I needed to cook for lunches so I made a vegetable lasagna. I don't think my recipe is the same two lasagna's in a row so this one contains:
1 pint of tomato sauce
2 pints of stewed tomatoes
1 carrot
1/2 a large spoon of garlic
1 zucchini
3 small sweet peppers
1/2 frozen container of spinach
3 large portabello mushrooms
6 lasagna noodles
16 oz fat free cottage cheese
32 oz part skim ricotta
8 oz fat-free cheddar
italian spices
dash of salt

I purreed the vegetables (minus the mushrooms) and added them to the tomatoes and tomato sauce to simmer. Then alternated rows of noodles with rows of mushrooms and covered each layer with sauce and the cheese mixture. The top layer ended up being just riccotta and cheddar sprinkled with cheddar as I ran out of the mixture that contained the cottage cheese. Hopefully it will be cheesy and still fairly low fat. I deliberately did not add any meat because last time I found it to detract from the lasagna instead of adding to it.
