Labors of labor day....
Sep. 5th, 2011 07:41 pmToday Marian and I canned 54 pint jars of peaches for me and about 13 quart jars of pickled beans for her. The last dozen and a half jars of peaches are rum spiced and will need to sit for a few weeks to be their best (Rum extract only, but only because the liquer stores were closed today). I'm glad to have that done. I bought a little over forty pounds of peaches when Albertsons had them on sale for $.88/lb last Tuesday and they've been ripening since then. Only one went over the edge but we had to do some trimming on six or so. I canned them without peeling them so we'll see how that works. It may be that they just slide out of their skins when they are dished up which might not be the most appetizing but not damaging to the taste at all.
